Avocado Pasta

This simple recipe was a huge hit in Finland a few years ago. I added cashew nuts to get a crunchier texture and some protein.

    Avocados

  • 1

    Lime

    Grated pecorino cheese

  • 100

    Grated parmesan cheese

  • 2

    Olive oil

  • 2

    Salted and roasted cashew nuts

    Black pepper

    Spaghetti

  • 2

    Fresh herbs: cilantro, basil, parsley.

  • 2

    Garlic cloves

  • Boil the spaghetti in salted water.
  • Chop the avocados and garlic leaves.
  • Squeeze juice of the lime on the avocados.
  • Mix cheese with other ingredients.
  • Chop the nuts and add in the sauce.
  • Add olive oil, salt and pepper.
  • Add some water from the spaghetti, if the sauce is too dry. Mix all with the pasta.
  • Add herbs and serve.
