Blackberry Pie

Fresh blackberries are so lovely that it would be a shame to bake them. In this pie the berries are added after baking, but you can also add them already before it. For a real treat you might add also some whipped cream. Try also replacing the cream in the filling with mascarpone.

    Fresh blackberries

  • Mix butter and sugar, add the egg and whip well.
  • Mix flour and baking powder and add them in the dough.
  • Mix in another bowl one egg, sour cream (or mascarpone), sugar and vanilla.
  • Spread the dough in a round recipient (diameter appr. 30cm).
  • Spread the filling on top of the dough.
  • Bake in 200 degrees for 30 minutes.
  • Add the berries and serve.
