Zucchini-halloumi Patties

Serve these tasty patties with rice or mashed potatoes. They are better fried on the pan, but an easier way is to cook them in the oven. Try to replace the zucchini or part of it with sweet potato for a change.

    Breadcrumb or flour

    Cashew nuts (optional)

    Olive oil

    Zucchinis

  • 4

    Eggs

  • Grate zucchinis and halloumi. Press the grated zucchini to remove extra liquid
  • Chop the nuts
  • Mix all ingredients. Season to taste: add paprika, garlic, herbs
  • Pour spoonfuls of the mixture on the frying pan or baking tray and shape them into patties. Fry 5 minutes each side or 15 minutes in the oven (200°c)
  • If you want, prepare a simple sauce of yoghurt, lemon juice, soy sauce, honey and herbs
