Onion & Champignon Carbonara

Carbonara without bacon can be quite delicious. Even thought the recipe includes a huge amount of onion, even children like it.

    Spaghetti

    Onions

  • 2

    Garlic cloves

  • 1

    Sugar

    Fresh rosemary

    Champignons

    Eggs

    Parmesan or pecorino cheese

  • Salt and pepper

  • Slice the onions and chop the garlic and fry them for at least 10 minutes, until the onion is caramelized. Add sugar and rosemary
  • In the meantime, slice the champignons and fry them in another pan
  • Cook the spaghetti. Save some cooking water for the sauce
  • Grate the cheese. Mix it with the eggs and add salt and pepper
  • Once the spaghetti is ready, pour the egg-cheese-mixture in the kettle and start stirring. The heat of the spaghetti will cook the eggs and melt the cheese transforming them into that tasty carbonara sauce. If needed, add some cooking water you have saved
  • Mix the onions and the champignons with the spaghetti and serve
